Guys, I have to come clean about something. I’m having an affair. Now, before y’all get all crazy on me, it’s not a Lifetime movie affair here. Instead, just a dirty,elicit, down right nasty affair with an appliance. To be blunt, I’m cheating on my stove with my crock pot. But, do you blame me? This gorgeous hunk of appliance has made so many delicious things for me since it’s arrival, like the overnight applecrisp and now this crock pot banana bread quinoa.

Now, this is easily something I could have made on my stove. But you know what? I don’t want to sit by the stove for 30+ minutes. On a Friday night. When I could be drinking wine and watching Lifetime. SO! I threw the ingredients into my sexy KitchenAid machine and let it do all the work. Because you know what? When you cook as much as I do, it’s nice to have something else do all the work sometimes.

Moving on from the affair talk, let’s chat about quinoa.

I’ve had it before, and I’ve been okay with it. It’s good, kinda chewy, tastes a bit like strange rice and barley. But never really cared all that much about it. Despite it’s superfood qualities (like 8 grams of protein per serving!). However, I think that’s because I never had it slow cooked with bananas, brown sugar and butter. I think that was my main problem right there. But then again, if you slow cooked cardboard or dirty socks with bananas, butter and brown sugar I’m pretty sure that would taste great too.

Friends, the reason this is named “banana bread quinoa” and not just “banana quinoa” is because it tastes EXACTLY like banana bread. With each spoonful you think you are eating a moist, right outta the oven slice of banana bread. Except since it’s protein packed quinoa, it’ll stick to your guts a little longer.

If your family (or picky husband) refuses to eat quinoa because “it looks weird” or “it sounds too healthy” disguise it to taste like banana bread. You’ll have them eating out of your hands (or in this case, directly out of the crock pot) in no time!

Crock Pot Banana Bread Quinoa

Yields about 6 1/2 cup servings.

Ingredients:

  • 1 cup of quinoa (I used Bob’s Red Mill)
  • 1/2 cup of Seasonal Coffee-mate Warm Cinnamon Sugar Cookie*
  • 1/2 cup low-fat milk
  • 1 cup water
  • 1 1/2 banana (past ripe)
  • 2 tablespoons chopped walnuts
  • 3 tablespoons brown sugar
  • 1 1/2 tablespoons butter, melted
  • 1/2 teaspoon vanilla extract

*NOTE! If you can’t find that kind of creamer or you’d prefer to use something else, substitute light cream and add about 1 – 1/2 tablespoons cinnamon.

Directions:

  1. Mash the banana in a bowl and set aside. In another bowl, mix the brown sugar and walnuts together.
  2. Pour quinoa, creamer (or light cream), milk, water, butter and vanilla into the crock pot. Add the mashed banana and stir to evenly distribute. Sprinkle the sugar and walnut mixture into the quinoa and stir to mix.
  3. Cook on low for 4 – 6 hours, or until the quinoa is fully cooked. If you need to, add additional liquid or sugar to the mixture for taste.
  4. Serve warm and garish with slices of banana!

Fat: 7 grams
Carbohydrates: 38 grams
Fiber: 2.5 grams
Protein: 5.5 grams
Weight Watchers Points: 6

    If you are trying to be healthy I would not suggest the use of an artificial flavoring like coffee mate. You can see the ingredients here and judge for yourself. (and no they don't even list them on their own site which should tell you something)

      Coffee creamer is a really bad idea. Corn syrup, artificially produced fat (1 molecule from being plastic) and all other artificially created ingredients do not add up to sensible eating, and no way is it nutritious. We need the calcium and Vitamin D from real milk, and yes, you need a certain amount of fat in order to metabolize vitamins A, D, E, and K. Use low fat if you like, but you do need some. You do not need artificial ingredients created in a lab. I like quinoa, and I love banana nut bread, so I will try this, but waiting until its done to add my very super-healthy nuts.

    This dish was *delish* :) Such a simple, healthy treat that wasn't too sweet. I used coconut milk for the milk and creamer, and a bit of olive oil for the butter. My batch turned out more like oatmeal but I think it's because I was too excited to wait a few more hours for it to get bready. Thanks for the post! Crock pots are so handy.

      You substitute a half cup of vanilla coffee creamer if you can't find the cinnamon sugar cookie coffee creamer, not a half cup vanilla extract! :)

    Love your site RN... I tried this last night and it was not a hit this morning. I used milk though, in place of the cream, and added cinnamon. I mixed it up very well, but overnight, the cinnamon all rose to the top, and then the bananas after that. So the finished product was a cinnamon layer, followed by a banana layer, followed by quinoa. I am imagining that all of the heaviness of the cream helps weigh things down and keep them mixed, and then all of that flavor in the creamer dissipates instead of all floating to the top. Darn it all - I wish I liked Coffeemate!

    I'm looking forward to trying some of your other recipes. Glad I found you!

    I made this last night. 1 1/2 Tablespoons of cinnamon added to the cream in substitute for the Coffee-Mate is wrong. It's WAY too much and completely ruined a lot of groceries. :( It wasn't even edible. Should that be 1 1/2 teaspoons?

    I don't totally love bananas, but I really liked this recipe. I typically put sliced bananas into my oatmeal, but mixing it in from the start really infused the flavor into the quinoa.

    I made this to review on my Pinterest Blog after a friend shared this pin with me. It didn't quite go as planned, but it is a recipe with a lot of potential. Most of my issues came from a crock pot that runs hot, so I just have to adjust for the extra heat. It was a great alternative to breakfast foods and we can't wait to play with it again!

    This stuff tasted awful. My wife made it overnight and our 4 year old hated it too. Even a teaspoon of brown sugar sprinkled over each serving couldn't save it. I think the problem is that quinoa is just not a breakfast food. I underatand trying to eat healthy, but it doesn't help when the offering tastes like coffee grounds.

      Use a timer (such as used for Christmas lights or lamps when you are away). Make sure the crock pot insert and all ingredients are cold to begin and set it to start 4-6 hours before breakfast

      Cook it exactly the way you normall cook quinoa (check the box). Takes little time, just watch the moisture and add as needed as you go. The crockpot just allows you to walk away -- but watch that, too. It's REALLY easy to burn in the crockpot.

    Great recipe- I took it to a potluck at work and everyone loved it! I used almond milk instead of regular milk and fat free half and half with cinnamon instead of the coffee creamer and it was fantastic!

    I saw your comment below where you say "everything in moderation" and while that works with things that are actually food, it doesn't work with over processed "foods" that are really no longer food.       My slow cooker automatically turns off when it's done cooking. however, the best call to action for this one is to make it ahead during the day (on a weekend when you're home) and then reheat later!

    Cooking it now- It seems to be working fine though I just added a bit more light cream- I used organic 1/2 & added cinnamon- I also stirred in about a tbsp of pumpkin butter- so far so good 1 hour left and the "samples" taste good

    To the person who is using Splenda- do some research on it. I think you'll find that it is NOT a healthy alternative to refined sugar.

    Also- a high quality rice cooker that can also be used as a slow cooker is a great purchase instead of one gadget that does each. I cook my quiona in my rice cooker on the white rice function and it turns our perfect every time.

    Okay soo! Coffee mate is not that healthy at least the flavored ones. And i myself cannot have dairy. The beautiful thing about online recipes is improvise!!!!! Tweak it how you want it dont attack the blogger people.. jeez. Also splenda is quite possibly one of the worst things you can put into your body. If it is artificial its not food fit for human consumption. Doctors say you are better off eating spoonfuls of white sugar than you are sucralose which is a molecular derivitive of sugar but not sugar and the body absolutely cannot digest it. The research would do anyone well. Steer xlear from agave also while it is lightyears better than artificial it does have some issues because it will cause a sugar spike in the body and then a bad crash which is unhealthy. I myself will try this recipe and will report back . Happy healthy eating y'all. And lets not be so hard on one another due to not knowing something!!!

    Glad I checked on this one and didn't leave it over night...this burned quinoa into my crock pot after just 2 hrs AND I had stirred it after the first hour. I can't get the burnt quinoa off of my crock pot now :-/ The salvageable mush isn't even worth eating.
